Steritech's two-day HACCP training course covers the 12 Steps in setting up a HACCP program, including the 7 HACCP Principles. This training will teach course attendees how to follow the steps needed to develop and implement a HACCP program.

A brief course outline is as follows:

DAY 1

  • Introduction to HACCP
  • 12 steps to Set Up a HACCP Program
  • Principle 1: Hazard Analysis with group exercises and reviews
  • Introduction to Principle 2: Critical Control Points

DAY 2

  • Principle 3: Critical Limits
  • Principle 4: Monitoring
  • Principle 5: Corrective Actions
  • Principle 6: Verification
  • Principle 7: Recordkeeping
