Convenience stores have dramatically expanded the range of foods they are offering. That means that many stores are taking on food preparation, storage, and handling tasks that are new to them. This can create issues when store employees either don’t know or can’t keep up with the proper food safety practices to keep foods safe for employees.

To determine the most commonly observed food safety challenges, Steritech examined data from more than 2,000 assessments it conducted at convenience stores in the period from January 2018 and June 2018.
